Calcutta Chicken with Apple Pepper Relish Bar-B-Q Chicken Salad

Rotisserie Chicken-skinned & boned & Chopped into bite size pieces

1/4 cup

Bar-B-Q sauce

2 Tbsp

Apple cider vinegar

1 Tbsp Olive Oil
1 bag Romaine Lettuce or Mixed Greens
1 cup fresh or frozen corn niblets
1 cup grape tomatoes cut in half
1 can black or red beans, rinsed & drained
1 hot or mild pepper, minced

Whisk together Bar B Q Sauce, Water & Vinegar

Slowly whisk in olive oil.

Toss lettuce with 1⁄2 dressing and place on serving platter.

Arrange chicken pieces, corn tomatoes & beans on top of lettuce.

Sprinkle with minced hot pepper & drizzle remaining dressing over top
