Calcutta Chicken with Apple Pepper Relish Chicken Couscous with Pine Nuts

Rotisserie Chicken-skinned & boned & Chopped into bite size pieces

1 pkg

Near East Toasted Pine Nut Couscous Mix

1 1/4 cup

chicken broth

1/4 cup chopped fresh basil & extra basil leaves
4 oz feta cheese crumbles
1 cup grape or cherry tomatoes cut in half
11⁄2 T fresh squeezed lemon juice
1 T grated lemon rind

Bring broth to a boil.

Stir in seasoning pack from mix.

Pour over couscous in a large bowl. 

Stir to combine, cover & let stand for 5 minutes.

Fluff couscous with a fork.

Stir in chicken, basil, tomatoes, feta cheese, lemon juice & rind.

Season w/ salt & pepper & serve on individual plates w/ basil leaf garnish.
