Calcutta Chicken with Apple Pepper Relish Easy Salad with Rotisserie Chicken & Fruit

Rotisserie Chicken-skinned & boned & Chopped into bite size pieces

peach slices

1 cup

strawberries

2 Tbsp walnuts
1/2 cup plain low fat yogurt
1/2 fresh ginger minced OR 1/4 Tsp ground ginger
1 cantaloupe – cut off rind & slice into 8 wedges
2 cups lettuce leaves

Combine rotisserie chicken, peach, strawberries, & walnuts.

Combine yogurt, honey & ginger.

On individual salad plates place 1⁄2 cup lettuce leaves. 

Top lettuce leaves with chicken & fruit mixture.

Pour yogurt dressing over all.

Garnish with mint leaves if desired.
