Jerk Chicken with Sherried Mangos

1/2 lbs

boneless, chicken breasts

1/4 cup

water

1/4 cup

lime juice

 1/2 cup

sugar

1 tsp

salt or to taste

2 tsp

pureed ginger root

2 tsp

jerk seasoning

2 tsp

butter

2

mangos

 1 cup

dry sherry

 

Bring water, lime juice, sugar and ginger to a boil. Cool and add chicken, marinate 2 to 24 hours. Remove chicken from marinade and coat with jerk seasoning and sauté in butter. Remove chicken from pan and add mango and sherry; cook until mango is heated thoroughly.
