NAME OF RECIPE:
Chicken Couscous with Pine Nuts
1 Rotisserie Chicken-skinned & boned & Chopped into
bite size pieces
1 Pkg Near East Toasted Pine Nut Couscous Mix
1 1/4 Cup Chicken broth
1/4 Cup Chopped fresh basil & extra basil leaves
4 oz Feta cheese crumbles
1 cup Grape or cherry tomatoes cut in half
1 1/2 Teaspoon Fresh squeezed lemon juice
1 Teaspoon Grated lemon rind
Bring broth to a boil.
Stir in seasoning pack from mix.
Pour over couscous in a large bowl.
Stir to combine, cover & let stand for 5 minutes.
Fluff couscous with a fork.
Stir in chicken, basil, tomatoes, feta cheese, lemon juice & rind.
Season w/ salt & pepper & serve on individual plates w/ basil leaf garnish.
