NAME OF RECIPE:
Easy Salad with Rotisserie Chicken & Fruit
INGREDIENTS:
1 Rotisserie Chicken-skinned-boned-Chopped into bite size pieces
1 Peach slices
1 Cup Strawberries
2 Tbsp Walnuts
1/2 Cup Plain low fat yogurt
1/2 Fresh ginger minced
OR 1/4 Tsp Ground ginger
1 Cantaloupe – cut off rind & slice into 8 wedges
2 Cups Lettuce leaves
INSTRUCTIONS:
Combine rotisserie chicken, peach, strawberries, & walnuts.
Combine yogurt, honey & ginger.
On individual salad plates place 1/2 cup lettuce leaves.
Top lettuce leaves with chicken & fruit mixture.
Pour yogurt dressing over all.
Garnish with mint leaves if desired.
